I also tried setting a rule from the compliance mailbox to forward the email to the main user who reviews these emails and overwrite the original senders infromation but the email address for the user who originally submited the email is dispalyed regardless. I am aware that the header has a purpose but for what we are doing, it needs to be removed. I should mention that I was able to do it but for incoming external email, not internal. There are better ways to obfuscate the sender instead of removing a header that has a purpose. Or create a generic mailbox called - I dunno, on this mailbox create a rule to forward all emails and delete the originals to this should work, unless you redirect, then emails retain their original sender. It's there for audit, so why not create a web form where users can fill in their issue and have that send the mail to the compliance inbox from another generic account using web forms. If you could remove the from header (not replace, but remove like you are suggesting), spammers would do this as well.
